Manitou Springs, Red Rock Canyon, CO

We always enjoy eating breakfast out if we can find something other than bacon and eggs, so yesterday morning we went to Manitou Springs, a small mountain town near the base of Pikes Peak. I had read about Adam’s Mountain Cafe having a lot of vegetarian options, and we ended up eating whole wheat blueberry pancakes in a lovely atmosphere, right on a stream in the heart of town.

We walked along the main street and looked in some of the shops, but as usual we didn’t buy anything since we have no place to put it. That’s one way you save money living in a small RV!  It is a cute town and there are lots of historic old buildings.

Of course, Jim wasn’t going to get away with eating pancakes and not exercising, so we drove another mile or so out of town to Red Rock Canyon Open Space, another free park with miles of trails for hiking, mountain biking and horseback riding. It is really a geological extension of Garden of the Gods, and was a nice place to take a hike. And being a weekday, we only saw a few other people there.
